Superfood pasta with four ingredients

Ingredients: Red Lentil, Beet, Sweet Potato, and Carrot. That’s it.

If you love your pasta and want to eat “free-from” foods, Cybele’s Free to Eat SuperBFood pasta might be of interest to you. With only four ingredients, this pasta claims to be free from the top 8 allergens including gluten, dairy, eggs, and soy. It’s an interesting concept that works, though the price point of this pasta is a bit high, comparatively speaking ($5.59 for 8oz dry pasta).

In order to get a real taste test on this pasta, we cooked according to instructions in salted water. Once the pasta was cooked (8 minutes total), we tossed it with avocado oil and added a little salt and pepper. We kept it clean to allow the flavor of the pasta to come through.

While we did enjoy the pasta, none of the true flavor of its ingredients came through. The texture was decent, but at the end of eating the pasta it definitely had that bean or potato texture finish. Again, not bad, just not your normal pasta.

We recognize that covering pasta with a sauce would give it a different taste and texture. We wanted it simple for our purposes of tasting.

We were a little disappointed in the appearance of the pasta once it cooked. It turned from a dark red to more of an orange-brown color, leaving all the pretty pinks in the pasta water.

We like the clean label with only four ingredients. We like the free-from, superfood angle of this product. We even like the taste. But with the high price, interesting texture at the end and loss of color in this pasta when cooked, it’s an IMBHO-maybe for Cybele’s.

What might be fun is getting a few varieties of this pasta (all different colors) for summer salads. That’s certainly something to ponder. A little Italian vinaigrette and refrigeration could be good for this pasta.

Cybele Pascal is the founder of this company. She was a professional cook living in New York and had a child with multiple food allergies, so she stepped up and started creating real food that was allergy friendly and it evolved from there. (You can find out more here.)

Not only does she have a pasta line, but she also created a line of allergen-free cookies. We’ll definitely be calling on our cookie monsters to taste test those, so watch for that review in the next few weeks.
