Fan-illa cake, even if you can’t bake

Lemme tell YOU, I was so excited to try this vanilla cake mix from Miss Jones Baking Co.

It was a bit more expensive than a traditional cake mix at $6.49 (purchased from Thrive Market), but I love cake, so it was worth the extra spend.


As soon as it arrived at my front door, I couldn’t wait to mix it up in a big ol’ bowl and stick it in the oven! 


Listen here, I cook everything from scratch, so I can get really picky about my cake mixes, very specific with the ingredients.

Miss. Jones Baking Co. makes cake mixes that promise to have a

“from-scratch” taste.

Hmmm… I’ll test that theory!


Does Miss Jones Baking Co. make something that tastes just as great as my homemade cakes? Or does it perhaps taste even better? 


The cake is baking, so we’ll find out shortly. While we wait, let me tell you about the company and some specifics about the vanilla cake in my oven.


Miss Jones Baking Co. was founded by Sarah Jones in 2015, introduced into the cake mix assortment at Sprouts. Ever since, it has been a thriving company.

Miss Jones Baking Co. has a wide range of easy-to-make desserts including cake mixes, ready-to-use frostings, brownie mixes, muffin mixes, cookies dough, “not” cornbread mix, banana bread mix, sweeteners and sugar blends.

I’m a girl’s girl, so I’m all about supporting other women and their businesses. 


Let's get down to the nitty-gritty… the vanilla cake mix’s ingredients include organic cane sugar, organic wheat flour (so no, it is not gluten free), organic tapioca flour, baking powder, natural vanilla flavor, and sea salt. The mix is also Non-GMO, Certified Vegan, and as I have said before, it is USDA Organic


When the mix is prepared, it is about

170 calories per cupcake.

170 calories also equals about

12 grams of sugar per serving.

There are about 18 servings per pouch, but not if you are me…

I must try to NOT eat the whole thing in one sitting, because I love cake… even without frosting. 18 servings? More like 6 for me. 


(Side note: I am making cream cheese frosting from scratch to go on this cake, as well). 


Straight from the box, the cake mix

smelled kind of like the knock-off lemon Oreos I have in my pantry (they’re basically just vanilla cookies with lemon creme in the middle- they’re absolutely delicious), mixed with a little bit of angel food cake. You can actually see the sugar crystals in the mix. 


I added the required 3 eggs, ½ cup of milk, ½ cup of unsalted butter, and 2 tablespoons of flour, then whisked it well. Once all the ingredients were blended, it smelled a bit like banana bread to me. Kind of strange…I keep smelling different desserts all from one cake mix. 


Now I’m going to keep it real, and be brutally honest with you guys…

I am not the type of girl that’s going to just put a bowl in the sink after making a dessert and NOT lick the bowl… come on now, who do you think I am?! 

The cake batter had a creamy, rich flavor of homemade vanilla ice cream made with only the finest vanilla. Oh my lord, it was delectable! I absolutely cannot wait for this cake to be ready!! 


Unfortunately for me, while the cake is baking, I can’t smell it, as I have had bad allergies for months now. Otherwise, you’d get the full picture on why I am so excited to try this cake.


At 350 degrees for about 25-30 minutes … 

tik…tok…tik…tok

ARGH!!!!!!!!! I just read on the back that I was supposed to split the batter in half between TWO 8 inch rounds, NOT pour it all into ONE!

Awh :( I am so disappointed.

I was really excited for a fully baked cake so I could add, from-scratch cream cheese frosting, but now there is hardly a cake to frost. The middle is absolutely NOT done at all…BUT I do have some fully-baked corners. 


Well, at least I get to just taste test it. Not a full loss for the rest of you reading a review written by me. Just a loss for me. Almost $7 and a dessert for my Friday evening. A lost cause. Welcome to REAL life!


I tasted the fully-baked corners and instead of being disappointed,
I was now very angry with myself for not reading the instructions correctly.

That’s a damn good cake…

minus the unbaked middle. What was I thinking!

Read the instructions next time. Grrr…

BUT… I will say this, just solely based on the cake batter and some baked corners, this cake mix from

Miss Jones Baking Co. is

a vanilla dream.

IMBHO-yes, baby!
