Birch Benders offers up a Keto pancake mix that touts only 5 grams of net carbs per serving, so I had to try it. Even better, it’s gluten free, so my daughter was able to join in the taste test.

I paid $7.99 for this pancake mix at Whole Foods, so it is a little higher priced than your ordinary pancake mix, as expected. If you look at the ingredients, you’ll see a very clean label—nothing to decipher. This is always a positive.

This mix is super simple—just add water. I was a little skeptical about texture, since almond flour was the main ingredient and it often gives a grainy texture to whatever you’re baking. I was right; the pancakes were a bit grainy in texture, but the flavor was there. In fact, my daughter indicated she liked them better than her go-to, gluten-free pancake mix.

While the package indicated 16, 4-inch pancakes could be made from the mix, I managed to squeak out 13 pancakes, so perhaps my scoops were slightly too big. What was nice was the fluffiness of these pancakes. As soon as I added water to the mix, the chemical reaction started and the batter moved up the side of the mixing bowl. They continued to rise as they cooked, too, culminating with a pancake about ¼-inch thick.

Since a serving size is only two pancakes, I will take the leftovers and freeze them. These will be nice to drop in the toaster for a quick breakfast as I head out the door in the mornings. I don’t use syrup on my pancakes, so they’ll be an easy grab and go.
